My First Pineapple Upside-Down Cake

So one of my co-workers has left the company because she is going to Japan for the summer and hopes to have a better job when she gets back. Last year, she came to my family's Thanksgiving. It was her first one since Japanese people don't celebrate Thanksgiving. One of my Aunty's had made a pineapple upside-down cake. She immediately fell in love with it and would always ask me if any of my family parties had more. So I couldn't not bake her a pineapple upside-down cake for her gift.

Enter my search for a good recipe. Just my luck I found one. I decided to try the Betty Crocker Pineapple Upside-Down Cake Recipe. For those that don't know, Betty Crocker has some amazing recipes. Since the recipe is right there, I'll just add my experience and photos with it instead of re-posting it here.

First off, you will need these tools of the trade:
For Measuring - 1/3 cup, 2/3 cup, 3/4 cup (for liquid), 1 cup, 1/2 teaspoon, 1 teaspoon
9 x 9 inch square pan
Heatproof serving plate that can cover the square pan



First off, it is way harder to sprinkle the brown sugar evenly than the words make it seem. Especially since the oven kind of tilted the pan. So I had to hold it level while spreading the sugar around in as even a fashion as I could. As you can see, I didn't use cherries. I prefer to just add more pineapple.


There is my little counter top with the ingredients. Baking in a tiny kitchen takes some good organizational skills. The mixture was much more liquidy than I thought it would be. I let my cousin taste it and he said that it tasted like sweet pancake mix. Just be sure that you did scrape the sides of the bowl while it was mixing so that no dry ingredients are stuck to the sides.

After watching Sherlock Holmes while it baked, it came out smelling and looking delicious.

Bee enjoyed it and so did my cousin. My co-worker texted me to tell me that she loved it. So I was quite happy with my first try at a pineapple upside-down cake.
